Small chocolate rolls

Oven cooking time: approx. 20 mins 

  1. Mix the flour, salt, sugar and yeast in a large bowl. Add the butter and the diluted milk, mix and knead into a smooth, elastic dough. Add the hazelnuts while kneading, cover and leave to rise to double the volume, for approx. 1½ hours at room temperature.
  2. Divide the dough into 4 sections, and flatten a little. Put 1 bar of chocolate in the middle of each piece of pastry, and roll it up in the pastry, to create the petit pains.
  3. Mix the hazelnuts and the sugar on a plate. Glaze the petit pains with egg white, dip them in the hazelnut sugar, and put them on a tray lined with baking paper. Leave to rise for approx. another 30 minutes.
  4. Cooking time: 20 mins in the middle of an oven preheated to 200 °C. 

Suggestion: replace the hazelnuts with almonds.
