Step 1

Start with the dark chocolate mousse. Melt the dark chocolate in a bain-marie.

Remove from heat, add 50 ml of milk and stir into a smooth ganache.

Add 1 egg yolk and stir vigorously.

Whisk 2 egg whites with a pinch of salt. Then gently fold them into the chocolate.

Pour the mousse into the glasses and place in the fridge for the rest of the preparation.

For the milk chocolate mousse, melt chocolate in a bain-marie.

Pour the milk chocolate mousse over the dark mousse and refrigerate again.

For the white chocolate mousse, repeat the same steps as for the milk chocolate mousse. Pour the mousse into the glasses and set aside in the fridge for at least 2 hours, or even overnight.
